2 Racks of ribs
Dry Rub
1/2 Cups Brown Sugar
1 tablespoons fresh-ground pepper
2 tablespoons Kosher salt
2 tablespoons Onion powder
2 tablespoons Garlic powder
3 tablespoons Paprika
3 tablespoons Cumin
Apple Juice
BBQ Sauce
Prepare Rub
Combine all dry ingredients and mix with a fork. Crush all clumps as mixing
Prepare Ribs
Remove the membrane from the ribs
Apply apple juice to ribs
Apply dry rub to the ribs on both sides.
Add ribs to vacuum seal bag
Set the water temperature of the water to 153 degrees. Add vacuum sealed ribs to water with sous vide and cook for 24 hours. Remove ribs from water (careful water is hot!!) and open bags. Finish ribs on the grill with BBQ sauce to taste.
