2 Stick (1 Cup) unsalted butter, softened
1 1/4 Cups Granulated Sugar
2 tsp Pure Vanilla Extract
1/2 tsp Almond Extract (optional)
1 Large Egg, Room Temperature
2 1/2 All Purpose Flour
1/2 tsp Baking Soda
1/4 tsp Coarse Salt
For Topping: 1/4 Cup Granulated Sugar
Preheat oven to 350 °F. Line a baking sheet with parchment paper or spray it.
In a large bowl with a stand mixer or hand mixer, cream the softened butter and 1¼ cups sugar together until light and fluffy (about 1 minute).
Add the egg, vanilla extract, and almond extract (if using); beat until combined.
Add the flour, baking soda, baking powder, and salt. Mix until just combined, scraping down the sides of the bowl as needed.
Roll the dough into 1-inch balls. Then roll each ball in the ¼ cup granulated sugar topping.
Place the balls on the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-11 minutes, or until the cookies have set around the edges.
Remove from oven and allow to cool. Optionally frost or glaze if desired.
