2 Chicken Breasts
1 teaspoon salt (I use coarse, kosher salt)
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon dried oregano
½ teaspoon cumin
1/4 teaspoon chili powder for mild or 1/2 for regular spice
½ teaspoon paprika, smoked or regular
¼ teaspoon black pepper (I use coarsely ground)
Cut chicken to the desired size. I do small chunks.
Dice onions and red peppers
Cook pepper and onions on the cooktop while cooking chicken on the cooktop separately
Add some water and power to the chicken to season
Set chicken, pepper, and onions aside
add butter to brown tortillas
Add cheese to 1/2 of the tortilla.
Add in chicken, peppers, and onions
Add another layer of cheese and close tortilla
melt cheese and flip until both sides are golden
brown
Service with Sour Cream, Guac, and Lettuce + Tomato and enjoy
