2 Tbsp Salt
1 Tbsp smoked paprika
1 Tbsp black pepper
1 Tbsp garlic
Optional: 1 Tsp cayenne or hot pepper powder
Turkey needs a few days to thaw from frozen. 12lb or less needs 3 days to defrost. Can keep in the fridge for up to 2 days thawed.
Turn on oil and heat to 375 degrees
Take turkey out 1 hour before cooking at room temperature.
Remove neck, bag and other parts in the turkey
Remove all excess water from the inside of turkey
Add rub to skin while turkey comes to room temp
Add turkey to oil and cook 3-4 minutes per pound. Normally 46-53 minutes on average
